Our
Ptarmigan Merlot
is soft
and
smokey,
with
rich
with
ripe black
cherry,
and notes of
blackberry.
The
wine’s
barrel
select aging
resulted
in soft
vanilla
and
toasty
oak
flavors,
as well
as a
hint of
spice
and a
mild
chocolate
finish. |

The
grapes
for our
Merlot
were
gently
processed
in order
to
capture
their
fruit
flavor.
The wine
went
through malolactic
fermentation,
which
reduced
its
total
acidity
levels
and
resulted
in a
softer,
more
complex
wine.
The
wine
was then
barrel
aged for
over ten
months
in new American
oak.
Exposure
to oak
enhanced
the
vanilla
and oak
notes in
the
wine.
There
was no
fining
and very
light
filtration.
