For Gewurztraminer, there is no better way of extracting character and flavor than a gentle press, so the harvest was gently de-stemmed as soon as it reached the winery. The must was then allowed to remain in contact with the grapes for a brief period, a technique winemaker's refer to as cold settling. If managed properly, cold settling can infuse the vintage with the additional layers of flavor and freshness contained within the skins. A basket press gently squeezes the grapes without too much crushing and grinding of the skins, a factor that can overwhelm flavor with excess tannin. |
